Scottish Shortbreads from Irene Peterson

From Irene:
When first married, I lived across the street from three ladies from Scotland. Trying to impress them, I made some shortbread, only I didn’t have butter, so I used margarine. They said the cookies were lovely, but what were they?

INGREDIENTS:

  • 1 cup softened unsalted butter
  • 1/2 cup powdered sugar
  • 3 cups all-purpose flour
  • 1 teaspoon vanilla (use the real stuff)
  • pinch of salt
  • PREPARATION:Mix together the flour and salt in a bowl. In separate bowl, cream together butter, vanilla and sugar until light and fluffy. Add dry ingredients a small amount at a time, kneading into creamed mixture. You might want to use your hands for this.

    Turn dough onto floured surface and pat or roll out to 1/4″ thickness. Cut into squares (the traditional shape is a triangle or pie shaped from a round) and place on an ungreased cookie sheet. Prick lightly with fork. Bake at 325° for approximately 15 minutes or until golden brown. Cool on racks and store in airtight containers.

    Scotland is one of those places high on my list of places to go. Must be the Celt in me that feels something for the Scots, although I refuse to try the haggis!

    1. Ah, Amie! I’d love to see your recipe as well! I so love these, but am too lazy to bake them. I make do with Walkers.

    2. My youngest sons class does this food from around the world thing every year and everyone is required to bring a family recipe and this is what I send! Sadly I don’t have my grandmother’s recipe–she got it from my great-grandmother who came over from Aberdeen *sigh* but we make do 😀

    3. I would one day like to visit Scotland, maybe its the romance of the country – castles, men in kilts *lol* and rolling hills. I’m not Celt but have always loved the ancient history of Scotland Druids and all its mystery!!

      Ahhh don’t think I’m brave to try them haggis. Have fun Gretchen – wish I was going and if you should come across a 6f Highlander with green eyes and dark hair with an awesome build, great smile and lovely personality plz bring him home for moi *grin*

      Nothing wrong with haggis if you don’t mind “pluck”. (which is just about the grossest way to describe what’s in haggis). It’s the first stuff they pluck out of the carcass..blecch…if I didn’t love barbecue I’d be at risk of going vegetarian right about now. It may gag me but if given the opportunity I do plan to try the haggis…wish me luck.
