Tasty Corn Casserole

With Thanksgiving rapidly approaching, I thought I’d share a couple of my fav dishes that I love to have on our Thanksgiving table. Ages ago my sister gave me a recipe for a corn casserole that’s incredibly easy to make, has only six basic ingredients, and is absolutely packed with flavor. I hope you’ll try to make it yourself and if you do, I’d love to hear what you think about it!

Carmen’s Corn Casserole

One 15 ounce can cream corn
One 15 ounce can kernel corn drained
One pint low fat sour cream
One stick melted butter
One package Jiffy corn muffin mix
One cup shredded cheddar cheese (optional)

Preheat oven to 350 degrees.

Combine first 5 ingredients. Grease casserole or brownie pan with butter. Pour ingredients into pan. Bake for 45-50 minutes until firm.

Sprinkle cheese over the top and melt the cheese for about another 5 minutes. Remove from oven and let casserole sit for 10 minutes. (If you can wait that long! LOL) Enjoy! If you want some variations on this, add some chopped roasted jalapeno peppers for some heat or double up on the cheese by mixing some into the batter. If you like it “sweeter”, add chopped roasted red peppers to the batter.

Time for Difficult Choices

Sometimes when I cozy up to the table on Thanksgiving I face a most difficult choice: Turkey or Ham? I have to confess that I only eat turkey on Thanksgiving. It’s not my go-to meat at any other time of year, except possibly ground turkey for tacos. But I feel as if I have to have turkey on Thanksgiving because that’s the tradition and honestly, it’s pretty tasty if made properly. But if there’s ham on the table also…. Yes, I know what you’re all saying! Why choose? Have a little bit of both and I usually do, but if I had a choice, I’d only have ham. What about you? Turkey or ham? P.S. – Did you know that you can make a variation of a Cuban sandwich by substituting turkey for the roast pork?

Sunday is a day for just kicking back and enjoying some well-deserved R&R, or for some, a chance to worship. The best part of my Sunday ritual is catching up with a dear friend over a scrumptious brunch before settling into an afternoon of relaxation. Maybe I’ll whip up a cozy meal or escape into an engaging read, or possibly a leisurely boardwalk stroll is in the cards. Whatever your plans, make sure to savor this lovely day!
