    Nutty Granola Bar #Recipe

    Sometimes at the end of the work day, I need a quick pick-me-up on the train ride home and to tide me over during my workout. I try to keep things healthy and not grab something bad at the local deli and lately I’ve taken to keeping some kind of granola bar in my knapsack for that quick bite.

    Of course, those quick bites can be chock full of calories also, so I try to be careful about what I grab. Because of that, the thought of making my own bars with my favorite things popped into my head and after scouring the Net, I’ve come up with this Nutty Granola Bar recipe.

    Nutty Granola Bar

    1/2 cup melted Almond Butter (you can substitute peanut butter)
    1/4 cup fat free condensed milk (not evaporate – condensed! The really thick sweet stuff)
    4 cups rolled oats
    1/4 cup honey (or agave syrup **warning** agave is way sweeter!)
    1/2 cup chopped pecans (or walnuts/almonds/peanuts)
    1/4 dried cranberries (or raisins)

    You can also mix into the above:

      Flaxseed
      Chia Seeds
      Chocolate Chips
      Butterscotch Chips
      Cinnamon

    Preheat oven to 350. Lightly grease a 9×13 pan.

    Mix all of the above in a bowl. If the mixture is too dry, add a little more almond butter and/or condensed milk. Press the mixture into the 9×13 pan. Cook for about 25 minutes.

    Take it out of the oven and let it cool a little bit. Cut out your squares or bars while it’s still hot. It’ll make it easier to get them out of there when they are cool. This will make about a dozen bars for you.

    If you are lactose intolerant and can’t handle the condensed milk, substitute more almond butter and/or peanut butter for the milk. Also, if you find it’s too sweet, also substitute the nut butter for the condensed milk.

    Hope for the Warriors & Newman’s Own Foundation

    As some of you may know, I donated part of my royalties from THE CLAIMED to HOPE FOR THE WARRIORS, a non-profit group that helps wounded veterans and their families. I just got an e-mail from them about their participation in the Newman’s Own Foundation challenge. Here’s what HOPE FOR THE WARRIORS said:

      Hope For The Warriors® was chosen by Newman’s Own Foundation to participate in their first ever Crowdrise challenge:  Honoring Those Who Serve Challenge. The prize?  Whichever nonprofit receives the most donations will also receive $75,000 from Newman’s Own Foundation. What would it mean to win? $75,000 could fund three additional Above & Beyond Seminars , directly supporting more than 75 post-9/11 combat service members and their families as they transition into new civilian careers.

    You all know I’ve been on a lifestyle change and it’s done wonders for me. I’m 45 pounds lighter, my cholesterol is down and I’m feeling fantastic! Like many people who have struggled with weight issues throughout their entire lives, I look for inspiration from both inside and out to help keep me focused on creating a healthier life for myself.

    So, I’ve been a fan of BIGGEST LOSER, but I’ve just recently found EXTREME WEIGHT LOSS on ABC and let me tell you, I’m impressed. Why? Well, put people in an artificial environment where they can workout 4 or 5 hours a day and I’m pretty sure you’ll get results.

    FOR LOVE OR VENGEANCE from THE CALLING/REBORN Vampire Novel SeriesOMG, it’s the release day for FOR LOVE OR VENGEANCE from THE CALLING/REBORN Vampire Series, the 12th book in the series!

    It’s really hard to believe that the first book in the series, DARKNESS CALLS, came out in 2004 and I want to thank all of you for sticking with me and with the series. I really appreciate it.

    Today is of course, Man Candy Monday and I thought I’d share with you which tasty man I’d cast as the hero from FOR LOVE OR VENGEANCE, sexy FBI Agent Miguel Sanchez.

    Like my hero FBI Agent, today’s Man Candy is Cuban-American and probably well known to you from his stint on Dancin’ With the Stars! He’s also been a star on various soap operas and telenovelas and also has a movie coming out soon – ADDICTED.

    If you haven’t guessed by now . . . it’s William Levy! I could so see him playing Miguel Sanchez and whispering sweet Latin nothings in the dark of night. OMG! I hope you enjoyed today’s Man Candy Monday and thanks again for all your support for THE CALLING/REBORN Vampire Series.
