I love to cook and had a blast writing #3 in the At the Shore series which is Emma and Carlo’s story! You’ve met Carlo in all of the books so far, but it was great to finally give him and Emma their story. You’ll also see lots more of Carlo in #2 WHAT HAPPENS IN SUMMER!

I went searching for a fun photo of what Carlo might look like and think this might fit the bill for today’s Man Candy Monday choice. What do you think? I wouldn’t mind cooking in the kitchen with him! Would you?

Eggplant Un-Parm #FoodieFriday #FitnessFriday

One of the things about changing up how I eat is to keep food fresh and flavorful, but healthier. After all, the only way to lose weight and keep it off is to create a lifestyle that you can live with every day.

I always watch a lot of cooking shows and one of the things the chefs mention is building layers of flavor. With that in mind, I tackled an update to one of my favorite meals: Eggplant parmigiana.

Eggplant is tough on several levels. It can be bitter although that doesn’t normally bother me. It sucks up oil like there’s no tomorrow. Plus there’s the frying in the parmagiana essential. So I decided to change it up by grilling and also, by not going heavy with sauce and instead also grilling the tomatoes. The grilling added a great smokiness to the dish that was offset by the tang of the goat cheese I used. I think you’ll love this!

Ingredients

2 medium eggplant sliced into rounds about 1/2 inch thick (I had about 20 rounds when I finished)
5 tomatoes sliced into rounds about 1/2 inch thick (I had about 10 rounds when I finished)
5-6 ounces of goat cheese
6 ounces of a mix of shredded provolone & mozzarella (Bought this pre-shredded and mixed)
4 garlic gloves
3/4 cup olive oil
2 tablespoons apple cider vinegar
1/8 cup fresh parsley
1 cup fresh basil

Directions

Preheat oven to 400. Preheat your grill on high and brush/spray with oil.

Place 1/2 olive oil, garlic cloves, vinegar, parsley and basil into either a blender or food processor. Blend until you have a sauce (kind of like pesto).

Place eggplants in a tray and put about 3/4 of the pesto mixture over the rounds. Toss to coat each one. Place on hot grill and cook for about 3-4 minutes a side. Don’t worry about cooking all the way as you’ll finish this dish in the oven, but don’t undercook. Eggplant is squeaky and unappealing when not totally cooked!

Remove eggplant rounds and place on a tray. You can put two on top of each other for now if you’d like. I used a greased cookie sheet that I later used to bake everything. Why wash more than you have to?

Place tomatoes in the tray and put remaining pesto mixture on them along with remaining 1/4 cup oil. Tomatoes stick a lot more hence the extra oil. Coat well with the mixture and place on hot grill. Cook for maybe 1-2 minutes a side. Don’t worry if they break. Place tomatoes in another bowl and let cool until you can handle.

Put one eggplant round on the greased cookie sheet and top with one tomato round. Add a sprinkle of the shredded cheese mix. Top with another eggplant round. Place 1 teaspoon or so of goat cheese on this layer and top with a little more shredded cheese mix. Enough to cover the goat cheese.

Repeat until all rounds are done.

Cook in 400 degree oven for 20 minutes. Broil for 2-3 minutes to brown the cheese on top.

Serve with a little grated parmesan cheese on top and a side salad! It sounds like a lot of work, but it really only took about 20 minutes of prep time and it was DELICOUS!

Connie’s heart thudded almost painfully in her chest as she wondered how, in a week’s time, she could leave him. The ache deepened beneath her breastbone and she put her hand there and rubbed to assuage the hurt.

What had started as a summer fling with a funny, smart, and beautiful boy had turned into something so much more, with an incredibly amazing man. Falling in love with Jonathan hadn’t been in her game plan, but he was just too hard to resist.

She should have resisted. He was a Pierce. She wasn’t a Sinclair, but Maggie was like a sister and that stupid family feud was still going strong, as far as she knew.

He was going back to Villanova in a week and she’d be returning to Princeton. The colleges were not all that far apart, but if she was to execute her game plan, she had to stay in the game, which meant studying and more studying. Not nights spent in bed making love and days spent daydreaming about the nights. But like Adam with Eve, now that she’d had a bite of such delicious forbidden fruit, she didn’t know how she could go on a Jonathan-free diet.

At the moment, she could just admire his sun-streaked light brown hair waving wildly around a masculine face with chiseled features. A sexy dimpled grin was on his lips and his eyes glittered with a blue as enchanting as a Sea Kiss summer sea.

That ache in her heart rocketed to life again together with an almost unbearable lightness in her soul. For so much of her life she’d been driven to accomplish more and more, but with Jonathan, she could just be herself. No goals or responsibilities. Just…happy.

And so, in the blink of an eye, her game plan altered. She could see it all so clearly, only now Jonathan was there beside her at each step. Finish college. Head to law school. Pass the bar. Get a job in a big New York City law firm so she could help her family financially, as well as others who had legal problems and couldn’t afford representation. Become a partner. Marry Jonathan. Or maybe marry Jonathan and then become a partner. She didn’t want to wait too long to be with him forever.

Not that she’d ever pictured getting married to anyone before, since her home life hadn’t been anything great. But for Jonathan, she’d make an exception.

As she snuggled into the curve of his arm and pillowed her head on his broad shoulder, she sighed and said, “I can’t believe the summer’s almost over.”

He grunted his reply in a too-typical male way. “Sucks.” But then he surprised her by adding, “I’d like to keep on seeing you once you’re back in school.”

She smiled, pleased by his admission, and glanced up at him. There was a contented smile on his full lips and the first hint of a dimple. The hard line of his jaw had a bit of blond stubble from an evening beard. She ran her hand up to brush away a lock of his hair.
“I’d like that, too,” she said.

His smile broadened and the dimple fully emerged, drawing attention to that luscious mouth. She couldn’t resist surging up to skim a kiss along that dimple and the corner of his lips.

“What was that for?” he asked.

She wanted to say because he made her happy, but she hesitated. She’d seen what could happen to a woman whose happiness depended on a man, as she’d watched her mother lose herself and her dreams.

“As a way for you to remember me until we visit each other at college,” she said instead.

Tension crept into his body, impossible to miss. Enough to worry her. She pulled back from him. “I thought you wanted us to see each other. At least, that’s what you said a minute ago.”

A chagrined look passed across his features, stirring the worry inside her.

“I do, only… I won’t be at college this year. I’m not going back to Villanova.”

She searched his face, finding it hard to believe, but he appeared deadly serious.

“What do you mean you’re not going back? Did something happen? Are you transferring to another school?”

It’s snowing in Minnesota and a very wet and cold day in New Jersey. Somehow it doesn’t feel like spring and I keep hoping that summer is on the way! To keep those summer hopes alive, I picture some of the sexy surfer dudes I occasionally see on the beach. They are what inspired Jonathan Pierce from WHAT HAPPENS IN SUMMER. Today’s recipes are for chia seed puddings, but I also sprinkle dry chia seeds on salad for some added texture and taste. I make my chia seed pudding with unsweetened vanilla almond milk and I don’t add sugar or honey because I usually mix it up with fruit and sometimes a little yogurt. The recipes below show you just how versatile you can be with this superfood! Chia seed pudding will last for about 5 days in the fridge so one batch is enough to last you for an entire week of breakfasts or desserts.
