Every now and then, I buy a Costco chicken and use it to make meals for us. I normally get at least four different meals from one chicken, and tonight I’m going to use it to make chicken enchiladas. That makes me wonder whether I should make some guacamole to go with the enchiladas. Of course, there’s also the salsa or pico de gallo route. Which would you choose? Guacamole or pico de gallo? P.S.
