Happy National Guacamole Day!

Happy National Guacamole Day! Guacamole has become one of America’s favorite dips. Did you know that the Food Institute estimated that during the 2024 Super Bowl, nearly 54 million avocados were consumed, probably in the form of guacamole? I love avocados in any way, shape, or form so for me, it’s bring on the guac! To make life easier for you, here’s a recipe.

Guacamole Recipe*

Ingredients

2 avocados, peeled, pitted, and cut into large chunks
1 cup chopped tomatoes
1/2 cup chopped onion
1/4 cup chopped scallions (greens and white)
1/2 cup chopped cilantro
1 tablespoon lemon juice (either fresh or bottled)
1 tablespoon lime juice (either fresh or bottled)

Ingredients

Place the avocado chunks in a bowl and mash. I like my guac chunky, but you can make it as creamy as you like. If you like it really creamy, mix in a little sour cream.

Add the onions, half the scallions, half the cilantro, and the lemon and lime juices, then mix. Add the tomatoes and gently mix.

Decorate with the remaining cilantro and scallions.

Some people keep the pits to put in any leftover guac to avoid browning. I never have any leftover guac, LOL!

P.S. Who would eat guacamole in my novels? How about my hero and heroine in THE FIFTH KINGDOM. They have to head from NYC to Mexico City as they try to track down an ancient relic with dangerous powers. It’s specially priced at 99 cents at https://link.amazon/B0d8AHVnK.
