Since we’re so close to Halloween, I’m sharing another happy Halloween memory. My daughter was all into Disney’s Pocahantas that year and I was into Deep Space Nine. It used to be so much fun to walk my daughter and her friends around the neighborhood after school and then come home to wait and see who would come around for trick or treating! I’m hoping we have some kids show up this year at our new townhouse.

Chicken Pot Pie the Super Easy Way
On a rainy or cold day, comfort food is a good way to chase away the chill and gloom. One of my favorite comfort foods is chicken pot pie, but you’re probably saying “That’s a lot of work!” You could buy a frozen pot pie, but I’m going to give you a recipe so easy, you won’t ever do that again! I could totally see Maisy from Trapping a Terrorist making something like this on a rainy Seattle day.
Ingredients
- 1 package Crescent Rolls (such as Pillsbury Crescent Rolls)
1 can Cream of Mushroom Soup (such as Campbell’s Mushroom Soup)
1/2 cup half-n-half or milk (whichever you have handy)
1 1/2 cups frozen peas and carrots
1/4 cup minced celery
1/2 cup minced onion or leek (whichever you have handy)
1 tbsp butter
3 cups shredded chicken meat (your local store rotisserie chicken is perfect for this)
Directions
Preheat the oven to 350 degrees.
Grease two small crockpots. Mine measure 5.25 X 2.5 inches and hold about 2 cups each of filling.
Open the crescent roll container. Lay it out and you will notice there are four square pieces that are cut diagonally. You don’t want to separate them along the diagonal.
Separate them so that you have four square pieces. Place one square in the bottom of each of the crockpots and gently spread them a little. They will likely not cover the entire sides, but that’s okay.
In a large bowl, microwave the peas and carrots for about three minutes. Add the chicken, cream of mushroom soup, and half-n-half/milk.
In a small pan, add the tablespoon of butter and saute the onion/leek and celery until just soft. Add this to the mixture in the bowl. (You can skip this step if want, but I like the flavor of the celery and onion in the pot pie.)
Mix everything well and spoon on top of the crescent roll in the crockpot.
Cover the mixture in the crockpot with the other square of crescent roll that remains. Stretch it a bit as you do so. Again, it will likely not cover the entire surface and that’s okay.
Bake in the oven for 30 minutes at 350 degrees. After 30 minutes, cover with foil and bake for another 15 minutes.
Remove from oven and cool a bit. The inside filling will be very hot, especially around the edges.
Happily Casting Trapping a Terrorist FBI Agent
It’s been a while since I did a Man Candy Monday so today we’re going to play a little game with some hotties! FBI Agent Miguel Peters from Trapping a Terrorist is a Cuban-American so today we’re going to pick who we might cast in the role if someone decided to make a movie from that book! So let’s choose from two sexy Cubanitos! Will it be William Levy who just starred in South Beach Love or Eddie Cibrian who just starred in Netflix’s Country Comfort? A tough choice! Share who you would pick for the role of sexy FBI Agent Miguel Peters.

A Happy Halloween Throwback
Since it’s almost Halloween, I thought I’d share a throwback to my sister, hubby (then boyfriend) and I all dressed up for a college Halloween party! We had a lot of fun putting together the costumes. My sister and mom worked on her Cowardly Lion costume. My mom helped me with my Mickey Mouse shorts. Hubby’s sister provided the big swatch of fabric for his cape and boy was it heavy. Hubby had an old Cadillac hood ornament hanging around that he used as his “Count” medallion. I guess I had a thing for vampires even then! LOL!

Yo Ho Yo Ho A Writer’s Life for Me
I knew in the fifth grade after doing a class project that I wanted to one day write a book. I kept at it over the years until I finally finished my first book. After that came revisions, submissions and rejection letters until I finally got “The Call.” Yeah! Some of you may wonder what my writer’s life is like and it’s pretty simple. I get up early and spend a few hours writing. Usually with the television on for background noise. Coffee, of course. I need to start the morning with a big cup of coffee, light and sweet.
You may wonder what else I need to write. My trust laptop and paper and a pen when I’m working out a rough outline. Don’t know why, but I like doing the outlines the old-fashioned way.
To keep me going at night as I prep a blog or work on social media, the occasional glass of wine or some chocolate. Lindt is my favorite!
