Happy St. Patrick’s Day from a Celt
Although my parents, siblings, and I were all born in Cuba, my grandparents all came from Galicia, a province in the north of Spain. This area of Spain was home to many Celts and some theorize that Celts actually originated in this area and spread throughout Europe and to Ireland. As in Ireland, bagpipes are also quite common in Galicia. When my sister did her DNA test, it revealed that she was about 18% Irish, a further testament to the connections between Galicia, Ireland, and the Celts! So this Celt is wishing everyone a very happy St. Patrick’s Day!

#TravelTuesday – Biltmore Estate, North Carolina
I love to travel and am looking forward to when pandemic restrictions are lifted so that I can do some traveling. I thought I’d share with you a place I’ve been lucky enough to visit: the Biltmore Estate in North Carolina. It is America’s largest home and the grounds around the home are amazing! If you either love history, gardens, nature, antiques, or wine, you may want to visit. There are charges for going on the grounds, but I thought it was worth the cost because there was so much to do! We visited the house, strolled through the gardens, conservatory, village, and did a wine tasting. You have to schedule the wine tasting, but it was worth it! We treated ourselves to a few of the wines and just had the first bottle the other night. We were not disappointed! Today I’m sharing some photos of our trip and I hope you will visit. I know I plan on visiting again since the Biltmore will change with every season.

International Woman’s Day – My mom and grandma #ThrowbackThursday
It was International Woman’s Day on Monday and today I want to share two of the most important women in my life: My mom and grandma. They were both strong, independent women and I wouldn’t be who I am today without them. My mother was the one who worked hard to get us out of Cuba and to give us the ability to achieve the American dream. She was sure there was no country better than the USA and she was right. My grandmother was the one at her side, helping my mom raise her family so that my mom could work. Like her daughter, she was indefatigable and an amazing cook! She could make anything taste good. Both my mom and grandmother were also voracious readers and I picked up that trait from them. As you can imagine, being a big reader led me to also thinking about being a writer. Thank you mami and abuela for being who you were. I miss you every day! This is a picture of us at Easter.

Breaded Pork Cutlets #WellnessWednesday
Eating well during this pandemic has been a little rough for me. Too many carbs and comfort food, but we’ve been trying to get back on track. We’ve also been trying to find healthier ways to cook some favorite foods, like breaded pork cutlets (or any cutlet for that matter). When we moved, we had to get a new toaster oven and after some research bought the new Cuisinart toaster oven with the air-frying option. We love how well the air frying works and here’s a recipe on how to make breaded pork cutlets with that option.
Breaded Pork Cutlets
2 Pork cutlets (about half-inch thick)
1 egg
1 cup Italian bread crumbs
1 tsp garlic powder
1/4 grated parmesan cheese (the real kind)
Pepper to taste
Cooking spray
Directions:
Mix bread crumbs, parmesan cheese, pepper, and garlic powder and place in a shallow dish. Beat egg in another shallow dish and place cutlets in beaten egg. Make sure cutlets are coated well with egg, but let excess egg run off. Dredge cutlets in bread crumb mixture until coated and then place them back in beaten egg. Cover both sides with remaining beaten egg and then go back into the bread crumbs for a nice thick coating.
Place breaded cutlets on a shallow dish. Spray both sides with cooking spray. I scored some free Pompeian Olive Oil Cooking Spray and I love it!
Set the pork cutlets aside and let them rest. This will help the bread crumbs adhere better.
Set the toaster oven to air fry at 400 degrees and pre-heat for five minutes.
Using the baking tray and mesh cooking tray provided with the toaster oven, line baking tray with aluminum foil and spray the wire mesh tray with cooking spray.
After five minutes, place bread crumbs on wire mesh tray and place in toaster oven. Cook for five minutes and then flip the cutlets. Cook for another five minutes until golden brown. Then remove from oven and let sit for 2-3 minutes.
Serve with your fave sides and applesauce!
