Cottage Pie

I’m always looking for an easy dish to make if I’ve got leftovers. We had some delicious potatoes that my daughter made and I immediately thought: Cottage pie! (Only Shepard’s pie if it’s lamb, I’m told). So if you’re looking for something to do with leftovers or to make it fresh, this is an easy one for you! Plus if you use a stove-to-oven pan, there is less to wash.

Easy Cottage Pie

Ingredients

    2-3 cups mashed potatoes
    1 cup grated cheese (cheddar/provolone/swiss)
    8 ounces chopped meat
    1 large onion chopped
    1/2 cup peppers chopped
    2 garlic cloves chopped
    1/4 cup wine
    1/4 water
    2 tbsp tomato paste (I keep a Cento tube in my fridge for ease of use)
    1 can of sweet peas (14-16 ounce or so)
    1 roasted pepper chopped (you can skip this, but I love them and always have a bottle of them around)
    2-3 tbsp olive oil
    Salt and pepper to taste

Directions

Preheat oven to 350.

Heat the olive oil in the pan until shimmering and add peppers. Saute for 3 minutes or so and add onions. Saute until softened and add garlic. Saute for another minute and add meat. Brown the meat and then add salt and pepper, tomato paste, and water. Simmer for another 3 minutes or so to heat.

Add peas. I used the whole can because we love peas, but you can adjust to your own taste. Stir gently and turn off heat on the pan. Top with the roasted peppers. Cover with mashed potatoes and make sure to cover the entire surface. Top with cheese of your choice.

Bake for 15 minutes or until mixture under the mashed potatoes is bubbling and the potatoes are starting to brown. If you’re using a low gratin dish as I did, place it on another baking pan to avoid spills in the oven.

Once the mixture is bubbling and brown, broil for 2-3 minutes. Make sure the pan you’re using can be used with the broil function!

Once it’s browned, remove from heat and let cool for a few minutes and then serve! Nom nom. It’s tasty, trust me. A real comfort food as well at a time when you need comforting.

I didn’t have carrots around, but if you do, add them! Also a little celery if you want. Adding vegetables in this is a good way to get added nutrients and also add filling volume that will help you eat less and keep down the calories. If you want something a little spicier, give it a shot of hot sauce or my new fav ingredient, gochujang Korean chili paste.

#MotivationMonday-Easy Indoor Exercises to Keep You in Shape and Sane!

This month has been a wash for me in terms of losing weight for a number of reasons. First, the Y and the yoga studio where my sister teaches have been closed. Second, I tend to eat when I’m emotional and while I haven’t totally lost control, my control has slipped.

Aware of that, I’ve rounded up the assorted fitness gear I’ve collected over the years. Dumbbells. Medicine balls. Resistance bands. Yoga mat, block, and straps. I’ve started doing a 30 minutes workout every day in addition to a walk while maintaining social distance. That has been hard thanks to people who won’t use common sense and move away as you approach. So we proactively move away once we spot someone and I hope that won’t be the new normal.

But back to working out. If you’re not a workout equipment hoarder like me, there are some exercises you can do or if you are a member of a gym or studio, check out if they are offering online sessions. Last but not least, how about dancing like no one is watching? Jumping up and down in place for a few minutes to get that heart rate up and your metabolism fired? Stand up straight and reach up to the sky, trying to touch the clouds! Movement of any kind for starters. Remember, a body in motion stays in motion. It’s a basic law of physics for a reason and it applies to everything, including our bodies.

Right about now we’d be talking about which Mets games we planned to go to this season and whether we’d go down to Philadelphia for one of the games. We did that often, especially when my daughter was in school in Philly. The Mets-Phillies games would always be around her birthday so it was a great birthday celebration to take her to the game and enjoy the day together. This is a picture from one of the games when I was joined by two of my friends, Lena and Linda. We had a blast no matter who won (but I think it was the Mets!)

#ThrowbackThursday – My Mom and My New Book

My mom has been on my mind a lot lately, maybe because the new book I’m working on contains many real-life stories about my mother, our journey to the United States, and the aftermath of it. I tried for many years to write about my mother but couldn’t. I felt stymied because there was so much emotion connected to the story. Including her story in a fictionalized work, through the eyes of other characters, has freed me to explore those emotions and build on them to create a tale about the journey of three women to find each other and for one, to find love. So for today, here’s a picture of my mom taken when she was just a toddler. Amazing how dressed up she was for the photo!

#TransformationTuesday – United We Stand

I’m feeling the way I did after 9-11: like my whole world had just been changed forever and not in a good way. I remember endlessly watching the news for information and hoping that people had made it out alive. I remember feeling emotionally isolated in those first few days and for many months afterward because it was the only way I could cope with what had happened.

I am lucky so far in that friends and family have been spared illness, but there is the worry for others who may be sick or in harm’s way. There is fear for our Nation and the world as a whole as this illness ravages the economy and people’s livelihoods are affected.

It is time to stand united against this disease and fight for our Nation’s recovery. It is also time that we hold nations accountable for the circumstances that help create these kinds of viruses. It is time for China and other nations that permit wet markets that traffic in wild animals for food to shut down these markets to prevent another pandemic such as this one.
