#ThrowbackThursday – When it gets too hot…

I remind myself that it could be like this! LOL! While I love a nice snow and some heat, the weather we’re about to get in the New York City area is brutal. Especially in the city where the bricks and buildings heat up and create what we call The Pizza Oven Effect. It truly feels like you’re being baked. But again, probably better than dealing with snow like this which fell on the Jersey Shore in December 2010. Hope you all have a Happy Friday Eve!

#WisdomWednesday – Find Yourself in a Book

One of my favorite things to do during the summer was to walk with my grandmother and sister to the library. Another one was to wait for the bookmobile to come so I could get another book to read. I would read everything and I can’t imagine not reading. For me, books transport me to another place where I can lose myself, but they also help me find myself. I find things in the characters that I love and how they overcome adversity. I find things I might not like about myself and I wonder how I can change for the better. So my wisdom for today is from an anonymous quote: Lose yourself in a book. Find yourself there too.

Beef and Asparagus Stir Fry – #TuesdayTip

One of the things I love about an Asian-inspired stir fry is that you can do it as simply or as complicated as you’d like. I often use it to clean out the fridge of veggies that need to be cooked. The most important thing to do before you start cooking is what chef’s call mise en place (which literally means “putting in place” in French). Why is it important? Well not all veggies and meats cook in the same amount of time and you don’t want one thing overdone and another raw. You also don’t want to be scrambling to chop, etc. In this dish I do the meat first to keep the crispy coating crispier and then start cooking all the other veggies in order of how long it takes to cook them before finishing up with the addition of the sauce. Hope you enjoy today’s recipe!

Sauce

1/2 teaspoon gochu-jang (red chili paste)(and if you haven’t gathered this is my new go-to seasoning!)
2 tablespoons hoisin sauce
2 tablespoons soy sauce (low sodium preferably)
1 tablespoon sesame seed oil
1/2 teaspoon grated ginger

Ingredients

2 tablespoons corn starch or flour or Wondra flour
1 cup thinly sliced strips of beef (a tender cut or one which needs to cook fast, like flank or skirt steak)
10 asparagus spears cut on the bias into one inch pieces
2 cloves garlic finely minced
1/4 cup red pepper in thin strips
1/4 cup sliced scallions (and include some of the green tops too!)
1/4 chopped walnuts (or peanuts or cashews)

Directions

Toss the beef with the corn starch and/or flour to lightly dust it. You don’t want a lot of flour/corn starch on the meat.

In a large skillet and/or wok heat 1 tablespoon peanut oil. Once it is shimmering and very hot, toss in the meat. Cook for a minute or so until the outside is light brown and flip. When the other side is light brown, remove from the pan and set to the side.

Add another tablespoon of peanut oil and heat until shimmering. Toss in the red pepper and asparagus. Cook for about 3 minutes and then add a 1/2 cup water and let the veggies steam until almost all the water has evaporated. Add the garlic and cook for about a minute. Add back the meat and add the sauce. Stir for another minute or two before adding the scallions and walnuts. Shut off the heat and serve.

The nice thing is you can also mix things up by adding other vegetables. Mushrooms, but cook them first after the meat at high heat since they release a lot of moisture. Baby corn. Thinly sliced carrots. Broccoli. You name it. Make this recipe your own!

#MatineeMonday – Always Be My Maybe

I was going to share another show today, but I needed a pick-me up and this movie definitely fits the bill. ALWAYS BE MY MAYBE is a rom-com with lots of humor and a feel good ending. I definitely recommend it. It’s the story of two life long friends who break apart after the death of the hero’s mother and a teenaged fling. Fast forward sixteen years and their lives have gone in very different directions. The heroine, Sasha Tran played by Ali Wong, is a celebrity chef and quite successful. The hero, Marcus Kim played by Randall Park, is living at home and working with his dad while sometimes playing music with his garage band. Sasha and Marcus find themselves thrown back together and rekindling the chemistry they once had, but not without some major bumps in the road. There is lots of humor, emotion and an ending that will have you smiling. There is also a surprise appearance by someone, but I won’t spoil that for you!

#ThrowbackThursday – 4th of July Fireworks

I love the 4th of July! I love the parades and most especially the fireworks. I also love knowing that I’m in a country that where I have freedom and rights I would not have had in the country of my birth. It’s why I get choked up every time I hear the national anthem or God Bless America. I know I am the one who is blessed. For today, some photos of the fireworks from the Jersey Shore. Nothing is more fun than sitting on the beach and watching all the different fireworks shows. #WriteWed-My Favorite Themes in Books

Writers, like readers, have their favorite things they like to include in their stories, if they can! For me, it’s a whole collection of things. Today I’m sharing some of my books that have one of my all time favorite things, namely cooking. If I wasn’t a writer I’d love to be a chef and here are some of my favorite books because they let me include some awesome cooking scenes. I’m also WAY excited about my upcoming Hallmark book since it features two chefs! You can visit the Cook’s Treat section on the website for some of my recipes.

  • MORE THAN A MISSION: The suspected assassin is the chef-owner of a restaurant. (MORE THAN A MISSION is actually one of my all time favorite books! It has suspense, emotion, and of course, good food!)
  • TORI GOT LUCKY and TO CATCH HER MAN: Two of the friends co-own a restaurant in South Beach.
  • THE PERFECT MIX: Heroine owns a restaurant in Union City, New Jersey.
  • A SEA KISS CHRISTMAS (#3 At the Shore – November 2019): Carlo is a caterer and you just have to know that he’s going to whip up some tantalizing dishes for wedding planner Emma.

#TransformationTuesday – Sticking to the Plan

Another day and another weigh in, but a great one! I’m down 19.6 pounds and well on my way to meeting my goal of having lost 20 pounds by the end of June. WOO HOO! I’ve been doing it by:

  • Walking a lot. I averaged 21,000 steps per day which is about 8.5 miles per day!
  • Journaling my calorie intake every day.
  • Staying active overall with 133 active minutes per day.
  • Made sure to drink enough H20 to flush toxins from my body.
  • Did strength training at least twice a week. Muscle has a higher metabolic rate which helps burn calories even while you’re idle.
  • Did cardio at least twice a week (not counting the walking)!
  • Ate more fruits and veggies every day. At least 2 servings of fruit and 3 to 4 servings of veggies.
  • Ate less simple carbs like bread and pasta (very tough for me).

Besides the weight loss, my resting heart rate has gone down to 63 and my blood pressure has improved from being on the average side to the low average side. All good things for staying healthy!

I’m sharing a picture I snapped last week so you can see the transformation. Not that drastic yet, but less love handles and pants are way looser. I’m moving down at least a size.
