Every now and then, I buy a Costco chicken and use it to make meals for us. I normally get at least four different meals from one chicken, and tonight I’m going to use it to make chicken enchiladas. That makes me wonder whether I should make some guacamole to go with the enchiladas. Of course, there’s also the salsa or pico de gallo route. Which would you choose? Guacamole or pico de gallo? P.S. On the Jersey Shore, we’ve been lucky so far with our weather. It hasn’t been that cold, and in the sixties during the day. Warm enough to stroll along the boardwalk. I try to do that as much as I can before the weather gets too cold. When I get home, I like to warm up with a nice cup of tea! What about you? What’s your go-to drink to stay warm? P.S. I’m off to the Fall in Love with New England conference with my wonderful daughter and several friends! I’m looking forward to seeing those of you who can attend this event! While I’m gone, hubby will have to fend for himself, but he’s pretty handy in the kitchen. Every now and then, we will do takeout, although we try not to since we’re trying to eat healthier. I’ll be heading off to the Fall in Love with New England Reader Conference and Book Signing this weekend with my lovely daughter!
