Do You Love Dramas or Sitcoms?

Hubby and I are television junkies. We watch everything from cooking shows to dramas to sitcoms. At night, we’ll watch TV for a few hours together, and after, I’ll watch murder and mayhem for another hour! We normally alternate between dramas and sitcoms, so I can’t say I have a favorite. Happy Birthday Dr. Seuss

Happy Birthday, Dr. Seuss, and Happy Read Across America Day! I grew up on Dr. Seuss and can honestly say he was a major reason why I fell in love with reading. I vividly remember waiting at the corner for the bookmobile during the summer to grab a new Dr. Seuss book. My favorites were the 500 Hats of Bartholomew Cubbins and To Think I Saw It on Mulberry Street, which has sadly been cancelled. We celebrate Dr. Seuss today with Happy Read Across America Day in his honor! I’ve already bought my little one his first Dr. Seuss ABC book, and he loves looking at it. National Pancake Day

Happy National Pancake Day! I confess that when I go to my Sunday brunch with a dear friend, I rarely get pancakes. I’m usually an egg kind of girl, but my precious grandbaby loves the blueberry pancakes I make for him. Of course, it could be the butter and maple syrup on them, but still, it gets him to eat! What about you? Do you love pancakes, and if so, what kind? Plain? Blueberry? Whole grain? I’d love to know! Have a great Saturday. I’m off to do some writing and a dreaded top-to-bottom clean of the kitchen.

My Favorite Snack Food

My favorite snack food is one I can’t have while I’m writing, unless I want to have orange fingerprints all over my laptop. As you might guess from that hint, my favorite snack food is Cheez Doodles. The puffy kind, not the hard ones. Pirates Booty will do also! What about you? What’s your favorite snack food? P.S. My fav snack food at the ball field is peanuts! Pork and Chorizo Chile

There is nothing better on a cold, winter day than a nice, hot bowl of something warm to fill your belly. Soup is often on the menu in our house, but I often change it up with some chili. Apologies to all the Texans out there, but my chili always has beans because I love beans and they are good for you! This is an easy, cook-all-day chili with lots of flavor and goodness! Chorizo & Pork Red Bean Chili

Ingredients:

1 lb red beans
2 lbs pork loin chopped
2 small Spanish chorizos chopped
1 cup chopped onions
3 chopped garlic cloves
1 28 oz can crushed tomatoes
1 can Rotel tomato and chili
3 tablespoon chili powder
1 tablespoon cumin
3 bay leaves

Directions:

Wash and check red beans for stones and debris. Soak for an hour to lessen the cooking time. Drain when you are ready to add to the main cooking pot.

Place a little oil in a non-stick pot and add the chopped chorizo. Cook for about 5 minutes, then add the chopped pork loin. Why chopped pork loin? Well, Cubans and pork go together like peanut butter and jelly. Also, it’s lean and has a lot less fat than a chuck roast, so I use those calories for the tastier chorizo.

Add the onions and garlic and cook with the meat until they are all just starting to brown. You want the brown on both the meat and veggies since these are the sugars caramelizing on them and will add flavor to your chili. Feel free to also clean out your fridge and add carrots, celery, etc. during this step.

Add the canned tomatoes, Rotel, and enough water to cover the meat and beans. Bring to a boil and then lower to a slow simmer. Cook until the beans and meat are soft. This may take 3-4 hours.

We ate our chili with some chopped fresh tomatoes, chopped onions, and grated cheddar cheese. You can also put some sour cream on top if you want!

Wishlist Wednesday

Apologies for not posting the last two days, but the blizzard that hit the Jersey Shore upset all the travel plans for our return trip from the Coastal Magic Conference! I had a lovely time, and now it’s back to reality. Or is it? I couldn’t help but think about what is on my wishlist for the months to come, and arrived at these three things: Beach time, tomatoes from the garden, and road trips with my daughter! I can’t wait for those, and some will come sooner than later, like the road trip. We’ll be heading to Authors Rocking Little Rock in late March, and if you’ll be in the area on March 21, I hope you can pop by and meet us! P.S.
