One of my favorite things about the Thanksgiving meal is the desserts, namely, the assortment of pies available. Thanksgiving is one of the loveliest holidays we have. Taking a day to be grateful for all that we have is something worth celebrating. Every now and then, I buy a Costco chicken and use it to make meals for us. I normally get at least four different meals from one chicken, and tonight I’m going to use it to make chicken enchiladas. That makes me wonder whether I should make some guacamole to go with the enchiladas. Of course, there’s also the salsa or pico de gallo route. Which would you choose? Guacamole or pico de gallo? P.S. On the Jersey Shore, we’ve been lucky so far with our weather. It hasn’t been that cold, and in the sixties during the day. Warm enough to stroll along the boardwalk.
