Tasty Ambrosia for National Ambrosia Day

Happy National Ambrosia Day! Ambrosia is one of those desserts that screams 1950s to me. It also reminds me of my mom since, in the summer months, she’d regularly make it! I never got the recipe from her, but I remember she used cream cheese in her version, and based on that, I came up with my own version of it! P.S. Ingredients

4 ounces cream cheese, softened
1 pint sour cream
1 can mandarin oranges, drained
1 can diced/sliced peaches, reserve the juice
1 can diced/crushed pineapple, reserve the juice
1 can fruit cocktail, drained
2 cups mini marshmallows

Directions

Place cream cheese in a large bowl. Add the juice from the can of sliced peaches to soften the cream cheese. Add the sour cream and stir. Add the fruit and marshmallows and stir. If the mixture seems too thick, use some of the pineapple juice to loosen it up, but not too much. Also, remember that the marshmallows will also thicken it again once it’s chilled. Place in the refrigerator for at least an hour or two.

Happy National Brownie Day

Happy National Brownie Day! Although no one made brownies for yesterday’s cookie exchange, it’s not because we don’t love them! We do! I love fudgy brownies with a crispy edge. I even have one of those pans that lets you have edges on each brownie! What about blondies? I confess I rarely order blondies. They don’t call to me as much as regular brownies. What about you? Happy National Cookie Day!

Happy National Cookie Day! I love cookies, although I’ve been avoiding them lately as I try to lose weight. Again. Sigh. But when I do have an occasional cookie, it’s usually an Oreo, which is one of my favorites. I wish I were a better baker because my absolute fav cookies are snickerdoodles. I actually plan on making some of those, as well as pretzel crack, for this weekend’s cookie exchange. I wish I could channel Chef Carlo from NEVER A BRIDE since I’m not really much of a baker. Happy National Pie Day

Happy National Pie Day! I’m not a big pie baker, but I love to eat a good pie. My fav is cherry pie, but I also enjoy apple pie with a slice of melted cheddar over it! As you might gather from my choices, I like fruit pies, and not cream pies. What about you? Do you prefer fruit pies or cream pies? P.S. Happy World Kindness Day!

Happy World Kindness Day! We all have our hard days, and on those days, a little kindness can mean all the world to someone. Even if it’s not a hard day, a little kindness can bring a smile and make the day brighter. So, if you can be anything, be kind. P.S. Speaking of kindness, one of my favorite books with this theme is ONE LAST NIGHT. Yes, it’s a very spicy book about a military hero, but the heroine’s heart is filled with kindness. The hero and his father are estranged, and when the hero’s father stands him up for a dinner intended to make things right, she goes instead so that the hero will not be alone on his last night before deploying.
